
Uji Aktivitas Antioksidan Ekstrak Kerang Balelo Rebus (Conomurex sp) Dari Perairan Pulau Derawan Dengan Menggunakan Metode DPPH

Abstract
Kerang balelo (Conomurex sp.) merupakan moluska yang banyak ditemukan di kepulauan Derawan, Kalimantan timur. potensi kerang balelo dapat dikembangkan pada bidang pangan maupun non pangan. Tujuan penelitian ini adalah mengkarakteristik kandungan kimia kerang balelo rebus, menentukan aktivitas antioksidan dan komponen bioaktif. Metode penelitian ini terbagi mejadi 3 tahapan yakni tahapan pertama karakterisasi kimia meliputi pengukuran morfometrik, uji proksimat, asam amino, asam lemak, mineral dan logam, tahapan kedua uji ekstraksi kerang balelo menggunakan 3 jenis pelarut yaitu metanol, etil asetat dan n-heksan, tahapan ketiga yakni penentuan aktivitas antioksidan kerang balelo rebus menggunakan Rancangan Acak Lengkap (RAL) dengan uji lanjut Duncan dan penentuan senyawa aktif kerang balelo rebus. Hasil penelitain menunjukkan bahwa pengukuran morfometrik terdiri dari panjang 5,17 cm, diameter 2,87 cm, dan rendemen daging sebesar 13,06%. Kerang balelo rebus memiliki kandungan protein sebesar 35,5%, abu 13,13%, lemak 1,39% dan karbohidrat 34,98%. Total asam amino esensial sebesar 34,79% dan asam amino non esensial sebesar 16,85%. Total asam lemak jenuh (SFA) sebesar 17,58, asam lemak tak jenuh (MUFA) 1,79%, asam lemak tak jenuh ganda (PUFA) 1,34%, omega-3 2,84% dan omega-6 0,85%. Mineral tertinggi terdapat pada iron (Fe) sebesar 1301,20 mg/kg dan logam terdapat pada mercury sebesar 0,17%. Rendemen daging kerang balelo rebus sebesar 10,04%, dan rendemen ekstrak metanol 10,04±1,24, etil asetat 1,27±0,37 dan n-heksan 0,34±0,03. Aktivitas antioksidan kerang balelo rebus menunjukkan ekstrak metanol, etil asetat dan n-hexan memiliki aktivitas yang berpotensi sebagai antioksidan dengan nilai IC50 sebesar 74,96 μg/mL pada ekstrak metanol, 43,57 μg/mL ekstrak etil asetat, 163,08 μg/ mL ekstrak n-hexan. Komponen bioaktif ekstrak metanol, etil asetat dan n-hexan mengandung alkaloid, flavonoid, tannin, saponin, fenol hirokuinon dan steroid.

Balelo clams (Conomurex sp.) are molluscs that are commonly found in the Derawan islands, East Kalimantan. the potential of balelo shells can be developed in the food and non-food fields. The purpose of this study was to characterize the chemical content of boiled balelo shellfish, to determine antioxidant activity and bioactive components. This research method is divided into 3 stages, namely the first stage of chemical characterization including morphometric measurements, proximate tests, amino acids, fatty acids, minerals and metals, the second stage of balelo shellfish extraction test using 3 types of solvents namely methanol, ethyl acetate and n-hexane, stages The third is the determination of the antioxidant activity of boiled balelo clams using a Completely Randomized Design (CRD) with Duncan's further test and determination of the active compounds of boiled balelo clams. The results of the study showed that the morphometric measurements consisted of a length of 5.17 cm, a diameter of 2.87 cm, and a meat yield of 13.06%. Boiled balelo clams contain 35.5% protein, 13.13% ash, 1.39% fat and 34.98% carbohydrates. Total essential amino acids are 34.79% and non-essential amino acids are 16.85%. Total saturated fatty acids (SFA) of 17.58, unsaturated fatty acids (MUFA) of 1.79%, polyunsaturated fatty acids (PUFA) of 1.34%, omega-3 2.84% and omega-6 0, 85%. The highest mineral is found in iron (Fe) at 1301.20 mg/kg and metal is found in mercury at 0.17%. The yield of boiled balelo clam meat was 10.04%, and the yield of methanol extract was 10.04±1.24, ethyl acetate 1.27±0.37 and n-hexane 0.34±0.03. The antioxidant activity of boiled balelo shellfish showed that the methanol extract, ethyl acetate and n-hexan had potential antioxidant activity with IC50 of 74.96 g/mL in methanol extract, 43.57 g/mL ethyl acetate extract, 163.08 g. /mL extract of n-hexane. The bioactive components of methanol, ethyl acetate and n-hexan extracts contain alkaloids, flavonoids, tannins, saponins, phenol hiroquinone and steroids.
