Abstract
Komoditas Unggulan Di Kota Tarakan Baik Dari Perikanan Laut Maupun Perikanan Budidaya Salah Satunya Adalah Ikan Bandeng. Penanganan Ikan Bandeng Segar Di Pasar Tradisional Kota Tarakan Masih Memiliki Banyak Kelemahan Karena Kurang Dilakukan Proses Pengontrolan Mutu Baik Saat Penangkapan, Pendistribusian Maupun Pemasaran. Hal Ini Menyebabkan Ikan Yang Berada Di Pasar Tradisional Mudah Tercemar Oleh Cemaran Kimia, Fisik Maupun Mikrobiologi. Penelitian Ini Bertujuan Untuk Mengetahui Perbedaan Cemaran Mikrobiologi Dan Cemaran Kimia Pada Ikan Bandeng (Chanos Chanos) Di Pasar Tradisional Kota Tarakan. Sampel Penelitian Diambil Di 4 Pasar Terdiri Dari Pasar Beringin, Pasar Gusher, Pasar Kampung Bugis Dan Pasar Tenguyun. Hasil Penelitian Menunjukan Pengujian Total Plate Count (TPC) Tertinggi Ditemukan Di Pasar Beringin Sebesar 1,0 X 106 Koloni/Gram Dan Terendah Di Pasar Kampung Bugis Sebesar 7,8 X 104 Koloni/Gram. Nilai PH Tertinggi Terdapat Ikan Bandeng Di Pasar Gusher Dengan Nilai Rata-Rata 8,2 Dan Nilai PH Terendah Terdapat Pada Ikan Bandeng Di Pasar Kampung Bugis Dengan Nilai Rata-Rata 6,7.

Leading Commodities In The City Of Tarakan, Both From Marine Fisheries And Aquaculture, One Of Which Is Milkfish. Handling Of Fresh Milk Fish In The Traditional Markets Of Tarakan City Still Has Many Weaknesses Because Of The Lack Of Quality Control Processes Carried Out Both During Fishing, Distribution And Marketing. This Causes Fish In Traditional Markets To Be Easily Polluted By Chemical, Physical And Microbiological Contamination. This Study Aims To Determine The Differences In Microbiological Contamination And Chemical Contamination In Milkfish (Chanos Chanos) In The Traditional Markets Of Tarakan City. The Research Sample Was Taken At 4 Markets Consisting Of The Banyan Market, Gusher Market, Bugis Village Market And Tenguyun Market. The Results Showed The Highest Total Plate Count (TPC) Test Was Found In The Banyan Market At 1.0 X 106 Colonies / Gram And The Lowest At The Bugis Kampong Market At 7.8 X 104 Colonies / Gram. The Highest PH Value Is Milkfish In Gusher Market With An Average Value Of 8.2 And The Lowest PH Value Is Found In Milkfish Fish In Kampung Bugis Market With An Average Value Of 6.7.
