Abstract

Kalimantan Utara memiliki potensi rumput laut yang cukup besar. Rumput laut dapat dimanfaatkan sebagai bahan makanan, bakan baku pembuatan kosmetik, farmasi dan industri. Salah satu pemanfaatan dalam bidang industri yakni pembuatan edible film. Edible film merupakan kemasan primer yang berupa lapisan tipis dan berfungsi sebagai pelapis bahan pangan dan digunakan sebagai pembungkus. Tujuan penelitian ini adalah menentukan karakterisasi edible film dari rumput laut Kappaphycus alvarezii (dengan uji kadar air, kuat tarik, ketebalan, kelarutan, daya serap air, dan uji biodegradabilitas) dengan penambahan carboxymethyl cellulose (CMC), gliserol dan tepung mocaf sebagai plasticizer. Metode penelitian ini ada tiga tahapan yakni tahapan pertama pembuatan tepung rumput laut, tahap kedua pembuatan edible film dengan penambahan CMC, gliserol dan tepung mocaf masing-masing 10%. Tahap ketiga pengujian kadar air, daya serap air, kuat tarik, ketebalan, kelarutan, dan biodegradabilitas. Hasil pengujian edible film dengan penambahan CMC menghasilkan kadar air 6,44%, daya serap air 7,80%, kuat tarik 0,87333Mpa, ketebalan 0,25mm, kelarutan 71,42%, dan uji biodegradabilitas sebagian edible film sudah terurai. Hasil pengujian edible film dengan penambahan gliserol menghasilkan kadar air 12,57%, daya serap air 8,94%, kuat tarik 0,84776Mpa, ketebalan 0,22mm, kelarutan 75%, dan uji biodegradabilitas sebagian edible film sudah terurai. Hasil pengujian edible film dengan penambahan tepung mocaf menghasilkan kadar air 10,79%, daya serap air 7,32%, kuat tarik 1,29333Mpa, ketebalan 0,16mm, kelarutan 71,42%, dan uji biodegradabilitas keseluruhan edible film sudah terurai. Hasil dari penelitian ini menujukan bahwa dengan penambahan tepung mocaf pada edible film lebih ramah lingkungan.

North Kalimantan has considerable seaweed potential. Seaweed can be utilized as food ingredients and raw materials for manufacturing cosmetics, pharmaceuticals, and industry. One of the utilizations in the industrial field is the manufacture of edible film. Edible film is a primary packaging in the form of a thin layer and serves as a food coating and is used as a wrapper. The objective of this study was to determine the characterization of edible films from Kappaphycus Alvarezii seaweed (by testing water content, tensile strength, thickness, solubility, water absorption, and biodegradability tests) with the addition of carboxymethyl cellulose (CMC), glycerol, and mocaf flour as plasticizers. This research method consisted of three stages. The first stage was making seaweed flour, the second stage was making edible film with the addition of CMC, glycerol, and mocaf flour, each 10%, and the third stage was testing water content, water absorption, tensile strength, thickness, solubility, and biodegradability. The results of edible film testing with the addition of CMC produced a moisture content of 6.44%, water absorption of 7.80%, tensile strength of 0.87333 MPa, thickness of 0.25 mm, solubility of 71.42%, and biodegradability test of partially decomposed edible film. The results of edible film testing with the addition of glycerol resulted in a moisture content of 12.57%, water absorption of 8.94%, tensile strength of 0.84776Mpa, thickness of 0.22mm, solubility of 75%, and biodegradability test of partially decomposed edible film. The results of edible film testing with the addition of mocaf flour resulted in a moisture content of 10.79%, water absorption of 7.32%, tensile strength of 1.29333Mpa, thickness of 0.16mm, solubility of 71.42%, and biodegradability test of the entire edible film has been decomposed.
