Abstract

Limbah kulit ikan Bulan-bulan (Megalops cyprinoides) yang berasal dari proses pengolahan, saat ini cukup melimpah, dan masih kurang dalam proses penanganannya. Limbah dibuang begitu saja tanpa diolah terlebih dahulu, padahal kulit ikan ini berpotensi sebagai sumber kolagen halal yang berfungsi sebagai bahan tambahan adiftif pada berbagai macam produk salah satunya kosmetik dan obat-obatan. Tujuan penelitian ini adalah mengekstraksi dan mendapatkan karakteristik proksimat kulit ikan bulan-bulan dan analisis rendemen, pH, FTIR dan asam amino kolagen larut asam dari kulit ikan Bulan-bulan. Prosedur yang digunakan pada penelitian ini terdiri dari tiga tahap yaitu preparasi sampel kulit ikan bulan-bulan, Pretreatment menggunakan NaOH dan ekstraksi kolagen menggunakan asam asetat. Parameter yang dianalisis meliputi komposisi kimia, penghitungan rendemen, nilai pH, pengujian FTIR dan analisis asam amino. Hasil penelitian menunjukkan bahwa kulit ikan bulan-bulan memiliki kadar protein 26,64% dan Rendemen kolagen yang diperoleh rata-rata sebesar 2,21% dengan nilai pH 6,8. Kolagen kulit ikan bulan-bulan menghasilkan karakteristik gugus amida (A, B, I, II, III) dan asam amino penciri glisin, prolin, alanin. Kulit ikan Bulan-bulan terbukti memiliki potensi dijadikan sebagai sumber alternatif kolagen dari hasil perikanan.

Currently, there is a lot of waste from the processing of Indo-Pacific Tarpon fish skin (Megalops cyprinoides), and there is still a shortage of management. Even though this fish skin may contain halal collagen, which is used as an addition in a variety of products, including medications and cosmetics, waste is just thrown out without being treated first. In this study, the proximate features of Indo-Pacific Tarpon fish skin were extracted and obtained, and the yield, pH, FTIR, and amino acids of acid-soluble collagen from Indo-Pacific Tarpon fish skin were analysed. Three steps made up the process utilized in this study: preparing samples of Indo- Pacific Tarpon fish skin, pre-treatment with NaOH, and collagen extraction with acetic acid. Chemical composition, yield computation, pH value, FTIR testing, and amino acid analysis were among the factors examined. With a pH of 6.8, the average collagen yield was 2.21%, and the protein content of Indo-Pacific Tarpon fish skin was 26.64%, according to the results. The amide groups A, B, I, II, and III as well as the distinctive amino acids glycine, proline, and alanine are produced by the collagen in the skin of Indo-Pacific Tarpon fish. It has been demonstrated that Indo-Pacific Tarpon fish skin has the potential to be utilized as a substitute for collagen found in fisheries goods. Keywords: Chemical Composition, Fiber, Amino Acids
