Abstract

Ikan gabus (Channa Sp) merupakan ikan asli air tawar yang berasal dari perairan budidaya di Indonesia dan tersebar di beberapa daerah. Ikan gabus memiliki kandungan albumin yang lebih banyak dibandingkan dengan ikan lainnya. Tujuan penelitian ini adalah untuk menganalisis kadar albumin dan mengetahui komposisi kimia dari ekstrak ikan gabus yang berasal dari perairan payau dan perairan tawar yang ada di Kota Tarakan. Metode penelitian terbagi menjadi 3 pengujian meliputi rendemen, analisis komposisi kimia, dan kandungan albumin dengan menggunakan analisis deskriptif kuantitatif. Penelitian ini menggunakan sampel ikan gabus air payau dan ikan gabus air tawar, Hasil penelitian ekstrak albumin kasar ikan gabus air payau memiliki hasil rata-rata rendemen 2,90%, kandungan kadar protein 39,98%, air 7,84%, lemak 1,78% dan kadar albumin 26,64%. Serta hasil ekstrak albumin kasar ikan gabus air tawar memiliki hasil rendemen 2,62%, kandungan protein 34,83%, air 6,93%, lemak 0,99% dan kadar albumin 12,24%. Berdasarkan hasil penelitian kandungan albumin, kadar albumin ikan gabus yang hidup di perairan payau lebih tinggi dibandingkan dengan ikan gabus yang hidup di perairan tawar.

Cork fish (Channa Sp) is a fish that lives in freshwater, comes from cultivated waters in Indonesia and is spreaded across several regions. Cork fish has more albumin content than any other fish. The purpose of the research was to analyze albumin levels and determine the chemical composition of cork fish extract from brackish water and fresh water in Tarakan City. The research method was divided into 3 tests including yield, chemical composition analysis, and albumin content by using quantitative descriptive analysis. The research used samples of brackish water cork fish and freshwater cork fish. The results of the research showed that the crude albumin extract of brackish water cork fish had an average yield of 2 90%, protein content of 39.98%, water 7.84%, fat 1.78% and albumin levels of 26 64% As well as the results of crude albumin extract of freshwater cork fish had a yield of 2.62%, protein content of 34,83%, water 6.93%, fat 0.99% and albumin levels of 12.24%. The results showed that albumin content and albumin levels of cork fish living in brackish water are higher than those of cork fish living in freshwater.
