Kepiting merupakan salah satu komoditas hasil perikanan yang ditemukan hampir di seluruh perairan laut indonesia. kepiting batu merupakan salah satu komoditas perikanan yang belum tereksplorasi mengenai kandungan gizi, mineral, habitat, dan aspek bioekologinya. tujuan penelitian ini adalah untuk mengetahui kandungan nilai gizi dan mineral kepiting batu (menippe mercenaria) dari tiga lokasi yang berbeda di perairan kota tarakan. penentuan lokasi penelitian menggunakan metode purposive judgment sampling. penelitian ini dilaksanakan di laboratorium nutrisi dan pakan ikan fakultas perikanan dan ilmu kelautan universitas borneo tarakan. pengujian mineral di laksanakan di laboratorium kualitas air jurusan manajemen sumberdaya perairan fakultas perikanan dan ilmu kelautan universitas mulawarman, selama tiga bulan mulai dari persiapan hingga pengujian gizi dan mineral dari bulan maret sampai bulan juli 2018. pengujian nilai gizi kepiting batu dengan menggunakan metode kjeldhal sni 012354.4-2006 (kadar protein), metode soxhlet sni 01-2354.3-2006 (kadar lemak), metode dry ashing sni 2344.1-2010 (kadar abu), metode oven sni 01—2345.22006 (kadar air) dan uji mineral menggunakan aas (atomic absorption spectrophotometer) yoshida et al, 1994. hasil penelitian menunjukkan kandungan nilai gizi dan mineral yang terdapat pada kepiting batu meliputi kadar protein 12,69 –18,10% , kadar lemak 0,19 – 1,17%, kadar air 73 – 79%, kadar abu 6,08 – 6,68%, dan komposisi mineral meliputi kadar magnesium 93,85 – 96,07 mg/100g, kadar kalsium 162,5 – 514,9 mg/100g dan kadar besi 2,80 – 7,35 mg/100g. berdasarkan data tersebut dapat disimpulkan bahwa perbedaan karakter habitat pada masing-masing stasiun tidak memberikan pengaruh yang berbeda terhadap kandungan proksimat dan kandungan mineral kepiting batu. Crab is a commodity of fishery products found in almost all of indonesia's marine waters. stone crabs are one of the unexplored fisheries commodities regarding the nutritional content, minerals, habitat, and bioecological aspects. the purpose of this study was to determine the nutritional value and mineral content of stone crabs (menippe mercenaria) from three different locations in tarakan city waters. determining the location of the study using purposive judgment sampling method. this research was conducted at the fish nutrition and feed laboratory of the faculty of fisheries and marine sciences of the university of borneo tarakan. mineral testing is carried out in the water quality laboratory, department of aquatic resources management, faculty of fisheries and marine sciences, mulawarman university, for three months starting from preparation to testing of nutrition and minerals from march to july 2018. testing the nutritional value of stone crabs using kjeldhal sni 01 -2354.4-2006 (protein content), sni 01-2354.32006 soxhlet method (fat content), sni 2344.1-2010 dry ashing method (ash content), sni oven method 01-2345.2-2006 (moisture content) and mineral test using aas (atomic absorption spectrophotometer) yoshida et al., 1994. the results showed that the nutritional and mineral content of rock crabs included protein content of 12.69 - 18.10%, fat content of 0.19 - 1.17%, moisture content 73 - 79%, ash content 6.08 - 6.68%, and mineral composition including magnesium levels 93.85 - 96.07 mg / 100g, calcium levels 162.5 - 514.9 mg / 100g and iron content 2, 80 - 7.35 mg / 100g. based on these data it can be concluded that differences in habitat characteristics at each station did not have a different effect on the proximate content and mineral content of stone crabs.
