Pengendalian persediaan merupakan salah satu aspek yang sangat penting bagi sebuah umkm. hal ini bertujuan untuk memastikan ketersediaan bahan baku guna mendukung proses produksi di masa mendatang. (1) penelitian ini bertujuan mengidentifikasi sistem pengelolaan stok pisang sebagai bahan baku untuk keripik pisang di umkm kenkokp, (2) menganalisis pengelolaan stok pisang sebagai bahan baku dengan menggunakan metode economic order quantity (eoq), yang mencakup analisis frekuensi pembelian, stok keamanan, titik pembelian kembali, dan persediaan maksimum. metode penentuan sampel menggunakan key informan. metode analisis data menggunakan analisis deskriptif dan analisis pengendalian persediaan bahan baku. sistem pengendalian persediaan bahan pisang di umkm kenkokp dengan kebutuhan bahan baku pisang sebanyak 14.784 kg selama setahun dengan total biaya persediaan sebesar rp 7.969.286 dalam setahun. pengendalian persediaan bahan baku pisang di umkm kenkokp belum optimal, hal ini dikarenakan tidak adanya safety stock, dan reorder point . sehingga dalam proses produksi terkadang masih mengalami kekurangan bahan baku pisang, setelah malakukan analisis pengendalian persediaan bahan baku pisang di umkm kenkokp menggunakan metode (eoq) dapat diketahui total biaya persediaan minimum sebesar rp 2.981.083 dalam setahun. sehingga memperoleh penghematan biaya persediaan sebesar rp 4.988.203. serta jarak siklus atau waktu antar pesanan selama 15 hari dengan frekuensi pembelian 19 kali dalam setahun, umkm kenkokp memiliki persediaan maksimum sebanyak 1.392 kg dan umkm kenkokp harus mengadakan safety stock sebanyak 320 kg. pada saat persediaan bahan baku pisang tersisa 423 kg maka umkm harus melakukan pemesanan dengan kuantitas pemesanan optimum sebanyak 793 kg dengan masa tunggu atau lead time selama 2 hari. kata kunci : pengendalian, persediaan, bahan baku, pisang, eoq

Inventory control is a crucial component for an msme, as it ensures the availability of raw materials to facilitate future manufacturing processes. first, this study aims to evaluate the banana inventory control system as a raw material for banana chips at kenkokp umkm. the study's second component entails examining the management of banana inventory as a raw material for banana chips. this analysis includes the use of a number of economic order quantity (eoq) models, including those for purchase frequency, safety stock, reorder point, and maximum inventory. the sampling technique for this component included the utilization of key informants. the data analysis method employs descriptive analysis and a review of raw material inventory control. the kenkokp msmes' banana material inventory control system has a total inventory cost of rp 7,969,286 per year, based on 14,784 kg of banana raw material. in the context of banana raw material inventory management at kenkokp umkm, there is a noticeable lack of effective inventory control methods, including the absence of safety stock and reorder points. this weakness frequently leads to instances of inventory shortages during the manufacturing process. a detailed analysis of banana raw material inventory control at kenkokp umkm using the eoq (economic order quantity) approach showed that the entire minimum inventory cost is rp 2,981,083 per year. therefore, rp 4,988,203 in inventory cost reduction was gained. furthermore, the cycle distance or time between orders for 15 days with a purchase frequency of 19 times per year was determined. as a result, it was established that umkm kenkokp has a maximum inventory of 1,392 kg, and umkm kenkokp must retain a safety stock of 320 kg. when the inventory of raw banana material stays at 423 kilos, msmes are required to place an order with an optimal order quantity of 793 kilograms, subject to a waiting period or lead time of two days. keywords: control, inventory, raw materials, bananas, eoq
