Karakterisasi Kandungan Kimia Gonad Bulu Babi (Diadema sp.) Dari Perairan Pulau Derawan

Abstrak Indonesia

Bulu babi merupakan kelo mpok hewan yang sering dijumpai di daerah pantai dan laut indonesia bahkan diseluruh dunia. bulu babi dikenal sebagai bahan makan oleh sebagian masyarakat indonesia dan masyarakat luar negeri. tujuan penelitian ini adalah untuk menganalisis kandungan kimia (proksimat, asam amino, asam lemak, mineral dan logam) dari gonad bulu babi (diadema sp.) asal pulau derawan. metode penelitian terbagi menjadi 5 pengujian meliputi analisis komposisi kimia, asam amino, asam lemak, mineral dan logam dengan menggunakan analisis deskriptif kuantitatif. hasil penelitian gonad bulu babi (diadema sp.) memiki kandungan kadar air 74%, abu 1,37%, lemak 2,19%, protein 13,13% dan karbohidrat 9.32%. asam amino yang gonad bulu babi terdiri dari 15 jenis yaitu 9 asam amino esensial dan 6 jenis asam amino non esensial total asam amino diadema sp sebesar 34,87%. asam lemak yang terkandung pada gonad bulu babi diadema sp sebesar 38,37% dan bulu babi coklat sebesar 46,38% yang terdiri atas 29 jenis asam lemak (11 saturated fatty acid, 8 monounsaturated fatty acid, 10 polyunsaturated fatyy acid). kadar total omega-3 sebesar 4,18% dan kadar total omega-6 sebesar 2.28%. kandungan mineral yang terdapat pada gonad bulu babi yang terdiri dari calcium, iron,, selenium dan zinc. sedangkan logam yang terdiri dari mercury. kata kunci: asam amino, bulu babi, gonad, lemak, logam, mineral

Sea urchins are a group of animal that are often found in coastal and marine of indonesia and even throughout the world. sea urchins are known as food ingredients by some indonesian and foreign people. the purpose of this study was to analyze the chemical content (proximate, amino acids, fatty acids, minerals and metals) of the gonads of sea urchins (diademasp.) from derawan island. the research method was divided into 5 tests including anaysis of chemical composition, amino acids, fatyy acids, minerals and metals using quantitative descriptive analysis. the study on sea urchins diadema sp.) produced results that were 74% water, 1,37% ash, 2,19% fat, 13,13% protein, and 9,32% carbohydrate. the amino acid found in sea urchins consisted of 15 types, namely 9 essential amino acids and 6 non-essential amino acids. the total amino acids of (diadema sp.) was 34,87%. fatyy acids contained in the gonads of sea urchins (diadema sp.) amounted to 38,37% and brown sea urchins 46,38% consisting of 29 types of fatyy acids (11 saturated fatyy acids8 monounsaturated fatyy acid, and 10 polyunsaturated fatyy acid). the total omega-3 was 4.18% and the total level of omega-6 was 2.28%. mineral content found in sea urchins gonads cosisting of calcium, iron, selenium and zinc. while the metal consisting of mercury. keywords: amino acids, sea urchins, gonads, fats, metals, minerals
